Last week our Two Birds Lager came back on tap and it’s been a popular one at our Liangmahe location since its return. We even had a German brew master tell us it’s the best Pilsener type lager currently in Beijing. Cheers to that!
For those who don’t know, Lager is a tricky beer for craft breweries to make due to its low fermentation temperature and required conditioning. Lager yeast, which is bottom fermenting, is not the same as ale yeast, which is top fermenting and while it can be fermented at high temperatures like ale yeasts, as is the case with Steam beers, it is best at low temperatures. This leads to a longer primary fermentation schedule, and low temperature conditioning means a lager can take lot longer than an ale before it is ready for people to moisten their throats with.
However, challenges in brewing are what make it fun and at Arrow Factory we are keen fans of Lager brewing and fermentation. The trick is keep is low, keep it slow, and wait. Which unfortunately is what customers have to do if we sell out of a fermenter and the next one isn’t ready.
