Alex Kratena and Simone Caporale


Artesian 团队的集体离去自上周曝出之后在业内引起广泛关注。同大家一样,我们也想了解整件事的来龙去脉。于是,我们采访到了这家获奖酒吧的两位灵魂人物之一——五年前加入酒吧的Simone Caporale(另一位是Alex Kratena)。他不但谈到了过去和当下,还透露了团队的新计划。


The mass exodus of the bar team at London bar Artesian has been the hot topic of conversation within the global bartender community since the news came to light last week. Just like everyone else, we wanted to know more. So we spoke to Simone Caporale, one half – with Alex Kratena – of the driving force behind the award-winning venue. Here’s what he had to say on the past, the present and what he has in store for the future.


饮迷:你是在怎样的际遇下去到Artesian工作的?
Simone Caporale:
那时我已经在伦敦当调酒师了,一天晚上Alex打电话给我,问我是否想加入。这样的机会谁会拒绝呢?我从未后悔过。


在那里的工作给了我很多回忆,但有一段是我毕生难忘的:Alex向我保证,如果我们拧成一股绳,齐心合力,就能为酒吧做许许多多特别 事情。这就是最最重要的——团队合作,它是一切的核心。


DRiNK: How did you come to work at Artesian?
Simone Caporale:
I was already working in London as a bartender and one night Alex called me on the phone asking if I wanted to join. What’s the choice? I’ve never looked back.


I have a lot of memories but the one that I must remember is when Alex promised me that if we stick together we could do lots of special things for the bar. And this is the most important thing – the teamwork, that’s what it’s all about.


饮迷:你们为什么会离开?
SC:
能在Artesian工作是我有生以来最大的幸事。在那里,我们总有完全的自由去展现创意,酒店管理层对我们也一直非常支持。我们能在那里工作实在很幸运。我们之所以离开是想在一个不同的组织框架之中进行试验,实践一套全新的方法。


要展开新的一页,你必须放弃一些珍贵的东西,而我们已经没办法把精力同时放在两件事情上了。我们需要时间来集中经营我们的下一个项目,它会非常复杂。不是说这个项目规模很大或更大,只是说它很复杂,构架全然不同。


DRiNK: What’s the reason for you leaving?
SC:
Working at Artesian was the biggest gift I’ve ever had. Over there we always had total freedom about creativity and the hotel management always supported us. We have been very lucky to work there. We are leaving because we want to experiment in a different structure, a new methodology.


To start something new you need to conclude something previous and we came to a point that we couldn’t run both things. And we need time to focus on our next project, which will be very complex. Not necessarily big or bigger but complex and structured in a completely different way.


饮迷:你和Alex一起工作有什么秘诀吗?
SC:
Alex和我有很多共同的想法,我们会不约而同地想到一起去。我想这是因为我们热爱自己的工作,也因为Alex和我都不在乎是谁先想出的点子。我们从不争功。


Artesian及其创造力的秘密在于我们总是一起工作,我们的想法一致。每周我们九个人都会聚在一起开创意讨论会。魔法就在其间诞生……


DRiNK: What’s the secret to your working relationship with Alex?
SC:
Alex and myself we generate a lot of common thinking and for some reason we can see through things at the same time without realizing. I believe it’s because we love what we do and also because Alex and myself don’t care about who had the idea of who came first with something. We don’t take credit for what we come about.


The secret at Artesian and its creativity is that we always work together, we always think together. Every week we run a session of creative group work with nine of us. That’s when the magic happens…


饮迷:你们团队成员之间的关系一定很紧密……
SC:
是的,我们很亲密。但是为各人的私生活留下一点空间也是重要的。这能有效地提高工作时的效率和专注度。我们必须树立榜样在先,同事们接受你们的理念是因为他们真心觉得它们好,而不是因为你是老板。否则团队协作根本无从谈起!


当然,我从没想到所有人会选择随我们离开。我几乎感动得落泪。我从没想过团队精神有这样强大。


DRiNK: You must have been close as a team …
SC:
Yes, we are very close to each other. But it’s also important to dedicate a bit of spare time for our private life. This can help very well the productivity and the concentration during the day at work. We must lead by example; colleagues must follow the ideas because they feel convinced about it, not because you are the boss. It will never work otherwise!


Definitely I would never expect that everybody would choose to leave after us. I almost cried. I never thought that the teamwork would turn so strong.


饮迷:你们和其他前Artesian成员现在都在做些什么?
SC:
有些同事会去度个短假。我们的工作已经排到了2016年4月。我们会持续不断的探索、实验、游历,而且每周都会开上三个会。实在没有什么时间休息。我们的梦想就是我们头脑中的想法,而这些必须要被付诸行动,变为现实。


DRiNK: What happens now for you and the former Artesian team?
SC:
Some of our colleagues will take a few days holidays. We are fully booked until April 2016. We will constantly keep researching, experimenting, traveling and doing three meetings every week. There is no time to rest. Our dreams are our ideas, and this must be put in practice to make it happen in reality.


饮迷:你们接下来有什么项目?
SC:
我们会做一个“多元合成体”,它结合了酒吧和非营利组织,会挑战“酒吧”现有定义的方方面面。


DRiNK: What are your next projects?
SC:
A “multidisciplinary collective”, a bar and non-profit organisation that will re-question every single aspect about the “bar” meaning.


饮迷:如果有一位调酒师正在犹豫是否该放弃稳定而薪水丰厚的工作、去进行新的冒险,你会对他说什么?
SC:
听从你内心的声音,要确定你所做的每个决定能真的令你开心。我们做这一行不是为了钱——有大把职业的薪水要高过调酒师。光考虑金钱会毁了一切……


DRiNK: Do you have any advice for bartenders struggling with the decision to leave a stable, well-paid job or take a risk on something new?
SC:
Follow your heart and make sure that each decision will make you really happy. We don’t do this job for money – there are better-paid jobs rather than being a bartender. Money is what can ruin everything…


饮迷:我们有可能在上海见到你吗?
SC:
我很愿意去上海和你们一起度过一段美好时光!当然啦!


DRiNK: Is there any chance we will see you in Shanghai?
SC:
I would love to come to Shanghai and have a great time with you all! Yes!
