一款充分体现老北京饮食文化精髓的豆汁鸡尾酒。

A douzhi cocktail that stays true to its neighbourhood Beijing chops.

它是如何制作的?

How is it made?

调酒师Leo是在东直门长大的,现在他的酒吧就开在附近。他从老北京人喝了几百年的豆汁中获得灵感,将豆汁的独特风味运用在了鸡尾酒中。Bar 4 Nine的酒品特色是融入中式风味,在本地和外籍酒客之间搭建了一个桥梁,这款鸡尾酒用到了他小时候经常和祖父一起喝的豆汁(发酵绿豆汁),可谓是名副其实的手工鸡尾酒。“我是在东直门那片儿长大的,就在我们现在开的酒吧附近,这也就是为什么我非常清楚给我们做豆汁儿的供应商在这一带算是最好的:他们是很多年的老字号了,当地人都知道。”

Bartender Leo Zhang grew up in the same Dongzhimen streets that his bar is located and wanted to explore drinks using the tastes that lao Beijingren have enjoyed for centuries. As part of Bar 4 Nine’s remit to use Chinese flavours in cocktails as bridge between locals and expats, this drink takes the douzhi (fermented mung bean juice) that he used to drink with his grandfather and gives it the craft cocktail treatment. “I grew up in Dongzhimen, the neighbourhood just around the corner from where we opened the bar, that’s why I know that the vendor we get our douzhi from is the best in this area: they always have been and all the locals know that.”

50ml 豆汁儿| Douzhi

40ml 伦敦干金酒 | London dry gin

15ml 柠檬汁 | Lemon juice

8ml 黑加仑利口酒 | Creme de cassis

8ml 热情果糖浆 | Passionfruit syrup

摇匀,滤入飞碟杯。用一束麦穗和一片干柠檬装饰。

Shake and strain into a coupe glass. Garnish with a sprig wheat and a dehydrated lemon wheel.

它尝起来如何?

How does it taste?

他们跟我保证说这对健康很有好处,我一点都不怀疑。我有什么理由要怀疑呢?从小我就知道药肯定不会好吃到哪里去,要是说某种东西“有益健康”, 我立马就条件反射性地想要呕吐。但是我实在是大错特错。金酒与豆汁非常搭,它浓郁的植物风味冲淡了豆腥气,甜甜的热情果将所有风味贯穿了起来。麦穗不仅仅具有乡村气息,还可以用来搅拌,因为这款鸡尾酒很容易分层沉淀。绿豆的味道可能要花点时间适应,但是绝对值得,非常感谢这杯鸡尾酒让我真正懂得了绿豆的美妙之处。美酒可以拉近人与人之间的距离,让这个世界变得更加美好,不信你就来尝尝这杯豆汁鸡尾酒。

Assured that this was good for my health, I was beyond sceptical. Why wouldn’t I have been? Medicine stops being delicious once you’re a kid and anything described as having “health benefits” is pretty much a guaranteed wrestle with your gag reflex. More fool me. The gin pairs well with the douzhi, its botanicals sharp enough to cut through the bean, while the passionfruit offers a welcome sweetness to bring it all together. The wheat isn’t just for a feeling of rustic charm but is there to stir the drink once it separates. Mung bean might take some getting used to but it’s worth it and I can thank a cocktail for that. Another case of drinking bringing people closer and making the world a better place.
